Savory Spinach and Cheese Stuffed Mushrooms

Ingredients:

  • 12 large mushrooms, stems removed
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
    • In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
    • Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.
    • In a bowl, combine the cooked spinach, cream cheese, feta cheese, Parmesan cheese, oregano, salt, and pepper. Mix until well combined.
  3. Stuff the Mushrooms:
    • Using a spoon, fill each mushroom cap with the spinach and cheese mixture, packing it in lightly.
  4. Bake the Mushrooms:
    • Place the stuffed mushrooms on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
  5. Garnish and Serve:
    • Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
